Someone asked us what actually goes into the regulars' favorite. So here it is, start to finish.

Fresh pasta into the pan. Truffle paste and mushroom building the base. Smoked bacon, then Grana Padano grated on right before it hits the table.

There's a regular who orders this every time without looking at the menu. Fresh pasta, truffle paste, mushroom, smoked bacon, a generous grate of Grana Padano on top. Nothing fussy about it, just made well, the same way each time.

Fish and chips is comfort food. But the batter here is vodka-beer, lighter, crisper, cleaner on the palate. Wild halibut inside, proper frites alongside, and a tartar sauce finished with caviar. Familiar, but with a little more intention behind it.
