The Pickled Barrmundi 'Fish N Chips' with Caviar Tartar

Fish and chips is comfort food. But the batter here is vodka-beer, lighter, crisper, cleaner on the palate. Wild halibut inside, proper frites alongside, and a tartar sauce finished with caviar. Familiar, but with a little more intention behind it.

Apero Classic Big Breakfast

There's a version of breakfast that's just fuel. This isn't that.

Eggs slow-cooked with French butter and pulled off the heat while they're still soft. Bacon crisped. A sourdough English muffin; toasted just right. Cultured butter churned in-house after 24 hours of fermentation. Jam made from scratch using fruit frozen at peak ripeness, so every spoonful tastes like the season it came from.
