Wagyu Kiniing

For this course, Chef Migs takes a traditional Cordilleran technique and applies it to one of Japan’s most prized ingredients.

Our Wagyu is sourced from Saga Prefecture and prepared using Kiniing, an age-old preservation method from the Cordilleras traditionally reserved for pork. The meat is cured in salt and gently smoked over mango or santol wood, a practice born from the need to preserve food in the mountains long before refrigeration.

This technique lends a deeper, more nuanced character to the Wagyu. It is served with a roasted garlic potato espuma, light and velvety in texture, and finished with crisp fried pumpkin for a touch of sweetness and contrast.
