“𝘛𝘩𝘪𝘴 𝘥𝘪𝘯𝘯𝘦𝘳 𝘤𝘰𝘯𝘤𝘦𝘱𝘵 𝘳𝘦𝘱𝘳𝘦𝘴𝘦𝘯𝘵𝘴 𝙩𝙝𝙚 𝙘𝙪𝙡𝙢𝙞𝙣𝙖𝙩𝙞𝙤𝙣 𝙤𝙛… 𝙚𝙫𝙚𝙧𝙮𝙩𝙝𝙞𝙣𝙜 𝙬𝙚 𝙝𝙖𝙫𝙚 𝙡𝙚𝙖𝙧𝙣𝙚𝙙.”

The inspiration for 𝗦𝗙𝗨𝗠𝗔𝗧𝗢 was born in the art galleries and food culture of Italy. After their summer term abroad, General Manager Madie Yacob returned with a clear goal: to oversee a “modern concretization” of this Renaissance vision. She ensures that the culinary, operational, and hospitality elements don’t just exist separately, but work together as one seamless experience.

Under Madie’s leadership, SFUMATO has evolved into more than just a dinner; it is a precisely managed experience where art, food, and service become an indistinguishable reality molded into one dinner service.

𝗕𝗲𝗵𝗶𝗻𝗱 𝘁𝗵𝗲 𝗣𝗮𝗶𝗻𝘁𝗶𝗻𝗴 is a series unveiling the blueprints of the minds managing the sfumato experience. In this penultimate chapter, we look through the “Visionary’s Eye,” where leadership, art, and food intersect to transform a capstone project into a meaningful legacy of the BS Restaurant Entrepreneurship Seniors Batch 2026.

To achieve the deep, moody aesthetic of our "Finger Smudging" technique, we turn to 𝐆𝐥𝐨𝐛𝐚𝐥 𝐏𝐚𝐜𝐢𝐟𝐢𝐜 𝐃𝐢𝐬𝐭𝐫𝐢𝐛𝐮𝐭𝐢𝐨𝐧 𝐍𝐞𝐭𝐰𝐨𝐫𝐤 𝐂𝐨𝐫𝐩𝐨𝐫𝐚𝐭𝐢𝐨𝐧.

The bright tartness of the strawberry coulis splattered onto our 𝘍𝘪𝘯𝘨𝘦𝘳 𝘚𝘮𝘶𝘥𝘨𝘪𝘯𝘨 course serves as the perfect medium for our artistic plating.

Their rich Dark Chocolate is masterfully maximized in several mediums in our dessert — it’s melted and molded into a dome, that is cracked to reveal the creamy mascarpone inside, and also used to contrast the splattered strawberry coulis all around the course.

Art is defined by its boldest strokes. Our partnership with Global Pacific | Food Solutions Provider brings the deep, contrasting tones to our plating, allowing for the high-contrast "smudging" that defines our aesthetic.

𝙏𝙝𝙚 𝙚𝙨𝙨𝙚𝙣𝙘𝙚 𝙤𝙛 𝙖 𝙥𝙚𝙧𝙛𝙚𝙘𝙩 𝙗𝙡𝙚𝙣𝙙.

At 𝗦𝗙𝗨𝗠𝗔𝗧𝗢, we use 𝐌𝐎𝐍𝐈𝐍 𝐏𝐡𝐢𝐥𝐢𝐩𝐩𝐢𝐧𝐞𝐬 to paint a spectrum of flavors across our plethora of beverages. Beginning from the sweet and citrusy brightness of white peach syrup in our 𝘍𝘳𝘶𝘵𝘵𝘢 𝘊𝘪𝘢𝘰 welcoming shot, and the delicate, floral lift of Elderflower Syrup for the mocktail version of our 𝘏𝘶𝘨𝘰 𝘚𝘱𝘳𝘪𝘵𝘻.

As the evening deepens, so do the notes: we infuse our coffee base and liqueur with Chocolate Syrup to build the soul of our 𝘛𝘪𝘳𝘢𝘮𝘪𝘴𝘶, finishing with a velvet layer of Dark Chocolate Sauce.

In the world of 𝙎𝙛𝙪𝙢𝙖𝙩𝙤, transitions must be seamless. We acknowledge the patronage of MONIN Philippines, whose infusions allow us to blur the lines between courses and beverages with sweetness and depth.

For our Maitre d’, Mikaela Billote, service is the art of transportation serving as the invisible thread that connects the art on the walls to the art on the plate. She ensures that the 𝗦𝗙𝗨𝗠𝗔𝗧𝗢 philosophy isn’t merely seen or tasted, but felt; extending far beyond the kitchen and the gallery-like design.

Her mission is to translate the seamless transitions of the 𝘴𝘧𝘶𝘮𝘢𝘵𝘰 technique into the rhythm of the dining room, where everything moves at its own intentional pace. The sfumato service is not just about a sequence of courses; rather, it’s a choreographed movement where hospitality and storytelling blend into one. Beyond the hospitality, Mikaela, alongside her team of server-curators ensure the technique is understood, and the art is truly felt.

𝗕𝗲𝗵𝗶𝗻𝗱 𝘁𝗵𝗲 𝗣𝗮𝗶𝗻𝘁𝗶𝗻𝗴 is a series highlighting the essence of what brought SFUMATO to life. This week, we introduce “ the Bridge and Conductor” where service becomes the connection between studio and guest, carrying you into the heart of the masterpiece.

From the meticulously curated selection of paintings to the interplay of various mediums into blending light and shadow, ensuring the careful portrayal of a “museum-like” dining atmosphere vision — bridging the gap between a visual and gustatory experience with “𝘦𝘢𝘤𝘩 𝘦𝘹𝘩𝘪𝘣𝘪𝘵 [𝘮𝘪𝘳𝘳𝘰𝘳𝘪𝘯𝘨] 𝘰𝘶𝘳 𝘮𝘦𝘯𝘶.”

𝗖𝗼𝗻𝘁𝗲𝗺𝗽𝗼𝗿𝗮𝗿𝘆 𝗜𝗻𝘁𝗲𝗿𝘃𝗲𝗻𝘁𝗶𝗼𝗻, 𝘚𝘍𝘜𝘔𝘈𝘛𝘖 𝘛𝘦𝘢𝘮 (2026)

Five centuries after its inception, we revisit the enigmatic 𝘚𝘢𝘪𝘯𝘵 𝘑𝘰𝘩𝘯 𝘵𝘩𝘦 𝘉𝘢𝘱𝘵𝘪𝘴𝘵. Through a deliberate application of the finger-smudging sub-technique inherent in sfumato, we have manipulated the painting’s periphery to emphasize the subject, reframing the Baptist and drawing him into the present moment.

This physical intervention manifests as our sixth course. Much like the tactile evolution of the canvas, guests are invited to smudge their dessert, blending the vibrant colors, flavors and textures of our concluding dish: 𝗙𝗶𝗻𝗴𝗲𝗿 𝗦𝗺𝘂𝗱𝗴𝗶𝗻𝗴.

In 𝙇𝙖𝙮𝙚𝙧𝙚𝙙 𝙂𝙡𝙖𝙯𝙞𝙣𝙜, we explore the architecture of the canvas. Through a structure of concrete and glass, we observe the alchemy of the glaze—where thin, translucent veils of color do not mask, but transform what lies beneath. It is a study of cumulative beauty, where every pane of light alters the tone of the masterpiece.

This same construction lives in our third course. A structural exploration where distinct tiers of flavor and texture are built like a painter’s composition. What begins as a single texture reveals itself as a complex interplay of layers, each bite shifting in depth as the components interact and dissolve.

Trace the glass, explore the layers; and witness the evolution of the composition. Step into the glow of 𝗦𝗙𝗨𝗠𝗔𝗧𝗢 and immerse yourself in a dialogue between projection and perception.

To conclude the 𝙎𝙁𝙐𝙈𝘼𝙏𝙊 experience, we draw inspiration from one of the most intimate techniques used by Renaissance painters: finger smudging.

In many masterpieces, the softest transitions of tone were not created with a brush, but by the artist’s own fingertips gently blurring colors together.

At the center of the plate rests a chocolate dome that, once cracked open, reveals a smooth mascarpone filling. Surrounding it are three distinct sauces—strawberry coulis, lemon custard, and dark chocolate—alongside mascarpone accents, butter crumble, and delicate coffee shards. Each element introduces a new tone to the composition.

But the final stroke belongs to you. A cacao spongecake is served on the side, inviting you to use it as your sponge to gently smudge the sauces across the plate. As colors and flavors merge, the canvas transforms.
