Yesterday's Grind.
Woke up at 1am yesterday to food prep and whip up a DELISHcious packed lunch for 12pax. due 9am... but was already busy the day before marinating key ingredients, preparing a tasty broth and blended sauces and vinaigrette (for me it had to be overnight so the flavors would seep thru and the sauces and dressings would ripen)
..Then off for a frontline duty at 10am
MENU
1. Peaches Crabstick and Sesame Salad with Blueberry Vinaigrette.
2. Buffalo Chick'n Pops
-BBQ Breading
-Honey Hot Chilli Coating
-Herb Mayo Garlic Bits Dip
-a few celery stick freebies
3. Meat and Seafood Paella (cooked in shrimp broth from the shrimp shell, head and trimmings) - Special Order not in the Ala Carte Menu
