We're all about comfort food, that delectable, juicy, melt in your mouth, holy crap experience. We aim to give you that backyard grill session you've always wanted to have with your buds. Chill and lounge and eat and laugh while the beers get ice blasted in the coolers. Authentic pulled pork sandwich slathered in a from-scratch barbecue sauce washed down by a cool refreshing huge glass of mu******

***ng iced tea. Or how about a brisket with that crispy bark and that oh-so-lovely smoke ring to show you what real smoked meat should be. What about those sausages? That smokey salty, peppery sausage that gets balanced out by that creamy, buttery mashed potato and baked tomatoes that explodes in your mouth with every bite. Winner winner, chicken dinner. That slow smoked chicken marinated in the all-original Filipino style marinte. With the full body of soy sauce twisted with a tail of citrus that gives you "ooomph" in every bite. The skin....oh god. And of course, the world famous Fat Butchik's liempo. Slow cooked, low heat, 3/4 inch pork belly bathed in that pinoy style marinate you all know and love. We gon' smoke you.

I've always loved pares. Having pares is usually reminiscent of capping off a good night out with the boys before going home and passing out on your bed. It has all the makings of a Fat Butchik's Special. Its low-brow, comfortable, familiar, yet has amazing room for potential. Everything I need to play with it is present in this simple folk legend of a dish.

So for the next few weeks I will be cooking pares using Clear River Black Angus Beef, we'll be braising it for 6 hours with a butter red wine reduction and making beef bone broth for your sipping soup.

We're doing a pilot of a new dish which we are affectionately calling Ragoût de Bâtard, Bastard stew. Beef belly boiled for 8 hours until buttery soft, Spanish Chorizo, baked chunks of potatoes, overboiled mushy carrots, fried bacon, burgundy wine, fresh tomato sauce, butter and a dash of parsley paired with the famous Fat Butchik's Buttered Mashed Potatoes. Each serving is good for share.
