Stop throwing away overripe bananas! 🍌
This Oatmeal Banana Bread is so easy to make, and it's the perfect way to use up those ripe bananas. Recipe below! 👇
Ingredients
150 g all-purpose flour
100 g rolled oats
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup (113 g) unsalted butter, softened
3/4 cup (150 g) brown sugar
2 large eggs
1 1/2 cups (345 g) mashed bananas (about 3–4 ripe bananas)
1/3 cup (80 g) plain Greek yogurt, room temperature
1 teaspoon vanilla extract
30 g macadamia nuts
30 g chocolate chips
Instructions
Bake at 300–350°F for 30–35 minutes. I preheated the oven to 350°F, then reduced the temperature to 300°F to prevent the top from burning.
Alternatively, you can keep the oven at 350°F and cover the pan loosely with aluminum foil halfway through baking.
I also added one extra banana, making it 4 bananas in total instead of 3, although the extra banana isn't shown in the video.
Pan Size
Aluminum foil pan: 204 × 114 × 55 mm (2pcs)
