☕ Coffee Bean Story Time

We’ve tried different beans for our bottled coffee—from Vietnamese beans that gave us good feedback before, to Allegro’s premium blend that we also enjoyed for its smooth and balanced taste.

But we eventually decided to stick with Cafe Amadeo’s Pahimis Blend.

Unlike the others, Pahimis is a true Filipino coffee blend made from 4 local varieties: Arabica, Robusta, Excelsa, and Liberica. That combination creates a deeper, more complex cup—bold and earthy from Robusta and Liberica, with added aroma, fruitiness, and character from Arabica and Excelsa.

Compared to Vietnamese beans, which can lean more acidic and sharp, and Allegro, which is smoother and more international in profile, Pahimis stands out with a distinctly local, full-bodied Filipino taste that holds up well in milk-based drinks and bottled coffee.

Homemade Skinless Longganisa 🌭

How to Cook:

1. Place the frozen or thawed skinless longganisa in a frying pan.
2. Add enough water to cover the bottom of the pan.
3. Cover and cook over medium heat until the water evaporates.
4. Once the water is gone, add a little oil or the longganisa will begin to release its own oil.
5. Lower the heat and continue frying, turning occasionally, until evenly browned and fully cooked (about 2 to 3 minutes).
6. Serve hot with garlic rice and egg.

Tip:
For a crispier texture, fry a little longer after browning. If using frozen longganisa, there's no need to thaw completely before cooking.

Storage: Keep frozen. Best consumed within 3 months.

🍵 Tea Testing Journal: Lemon Ginger & Chamomile Allegro 🍵

As we prepare for the rainy season, we're exploring wellness teas that we might offer at Jas' Food Hub.

Our recent tasting featured 𝐋𝐞𝐦𝐨𝐧 𝐆𝐢𝐧𝐠𝐞𝐫 and 𝐂𝐡𝐚𝐦𝐨𝐦𝐢𝐥𝐞 tea.

We noticed that the Lemon Ginger tea had a light floral, almost perfume-like aroma. After checking the ingredients, we found that it contains chamomile, which likely contributes to that unique scent.

Chamomile tea was soothing and relaxing, but its flavor was very subtle. Interestingly, the Lemon Ginger tea tasted more like chamomile with a gentle ginger finish rather than a bold lemon-ginger blend. We also noticed that leaving the tea to steep for too long can make it taste bitter, so timing is important.

Everyone's tea preferences are different, and that's what makes this journey fun! 😊
