Our featured breakfast for today is, Tapsilog from the Bag of Beans Tagaytay. Best paired with your favorite Kofi Drip.

Did you know that Tapsilog is a portmanteau formed by combining three words, tapa (cured meat) sinangag (fried garlic rice), and itlog (egg)? These three represent the composition of the dish, which is traditionally served for breakfast.

A Filipina named Vivian Del Rosario popularized the beloved tapsilog. She opened a simple canteen in 1986, catering to the masses with restricted budget, such as jeepney drivers, tricycle drivers, and the likes. She named the store Tapsi ni Vivian at Bulaluhan, where she sold bulalo and tapsilog. She was the first one to call the tapa, sinangag, itlog as tapsilog, and now known as the "Tapsi Queen."
