JM'S PANCIT MALABON 🍜
INGREDIENTS :
1. Bulacan noodles available in Malabon commercial market
2. Tinapa flakes
3. Chicharon flakes
4. Atsuete with lihiya
5. Cooking oil
6. Kalamansi juice, fresh
7. Pork
8. Shrimps
9. Squid
10. Bilao
11. Salt
12. Pepper
PROCEDURES:
Soak noodles overnight.
Cook pork until tender, cut in bite size.
Cook shrimp for about 4 minutes, deboned and set aside.
Cook squid, adobo style.
Cook eggs, remove shells then set aside.
Soak atsuete with lihiya in hot water until the color render, strain.
In a sauce pan put about 1 cup cooking oil add the atsuete juice, cook until boiling, set aside.
PREPARATIONS:
Cook the noodles until tender, then remove them from the water and drain well. Place the noodles in a wide, large stainless basin. Add annatto (achuete) oil until all the noodles are evenly coated. Add calamansi juice according to your desired level of sourness. Add chicharon and smoked fish (tinapa) according to your taste, then combine all the ingredients well. Transfer to a bilao and garnish with sliced eggs, pork, shrimp, and adobo squid.
