Spent an incredible, flavor-packed two days at the Gelato Workshop hosted at the Fabtech Kitchen Theater in Makati!

From July 29–30, I dove headfirst into the science, art, and delicious techniques behind premium frozen desserts.

We brought together the best of both worlds: award-winning, local Auro Chocolate and authentic Traditional Italian Gelato methods.

… and this how I earned my new title of Certified Gelato Scientist:

🧪 Day 1: All Chocolate Gelato
We deep-dived into the complex chemistry of rich cocoa fats and scoopability using Auro’s finest local chocolate. Translation: I learned how to make premium chocolate frozen perfection instead of just eating it straight from the bag. We even made gourmet gelato pops!

🇮🇹 Day 2: Traditional Italian Gelato
Day two was all about authentic Italian bases, texture overrun control, and playing with high-tech commercial batch freezers. Basically, I now know how to get that perfect, silky, dense Italian texture without trapping a bunch of air in it.

Big thanks to the instructors for sharing their formulation secrets. My brain is full of formulas, my certificate is locked in, and my freezer is about to get a major upgrade.

We are incredibly honored to be one of the representatives in DOT Region I and the Philippines at the Thailand Tourism Promotion and Travel Trade Engagement Program 2026!

Held at the iconic Chang International Circuit in Buriram, this event was an amazing opportunity to showcase the rich, diverse flavors of the Northern Philippines to our ASEAN travel trade partners.

Signing up and making it to the top 40 on the final list of accepted competitors on different savory categories; making us a barely young small resto in Ilocos province competing with various 5-star hotels and Michelin-recognized restaurants, famous culinary schools, and international chefs from Asian countries— GAVE US COLD FEET BUT HIGHLY DETERMINED FIGHTING SOULS ‼️‼️‼️‼️‼️‼️

We thank all the chef-judges who evaluated and critiqued our dishes; it was a humbling learning experience. To our competitors in the arena who became our friends, you inspired us to love the kitchen even more. CONGRATULATONS TO ALL OF YOU AS WELL 🏆🥇🥈🥉🏅🎖️🏆
