Struggling to give up RICE but want to loose weight & control your sugar? Swap your regular rice with Adlai grains. Tested this grain myself, does not increase blood sugar levels and it makes you feel fuller longer. The pictures below shows my blood sugar levels before eating and an hour after eating.
To fully enjoy Adlai grains:
1. Boil Pandan leaves and set aside
2. Wash Adlai grains numerous times (10-12 times) Adlai has a distinct NFA taste, you don’t want that in your rice
3. Boil Adlai in enough water (count 2 minutes after it starts to boil then remove from heat) then discard the Adlai water and rinse Adlai.
4. Put back in pan and add pandan juice, water just reaching the topmost level of the Adlai, bring to a boil. Lower down heat, cover and let simmer for another 10 minutes. Cool.
5. Transfer to containers and freeze. Freezing develops more resistant starch, thereby lowering its glycemic & carb content
5. Reheat, serve & enjoy.
