We know the difference between Tonkotsu and Tonkatsu. (The first is a soup, the latter is fried pork cutlet)

There's no such thing as Tonkatsu ramen. Unless you made stock out of deep fried pork cutlet. That would be weird.

This ramen below is an original where you can't find it anywhere.

This is how you know a ramen shop thrives for quality, authenticity and strive to give you something you never had.

Hi there. It's been nonstop rain, I'm getting inquiries on items available. Very limited items, but order early so I can run to the market and get ingredients. A few stores are closed, so it might be difficult to procure some stuff, but I'll see what I can do.

Delivery schedule. The rider will be assisting me around 2 pm onwards, so just a heads up. If there is delay, I apologize in advance. HAFU is not a big shop with lots of employees. Just an online food ordering hub, and I cook the items myself. Apologies also for late replies, as I am also the only one handling my social media stuff.

Something about it that you can do so many versions, yet you keep coming back for what is familiar.

How about something different?

I take pasta making seriously as much as I do ramen.

I stick to homemade versus store bought sauce.
Using local tomatoes, local fish, cure my own pork, make my own breadcrumbs, housemade sausage...etc.

Inquire about these special pastas and we can do party trays of it as well.

Vegetarian Broccoli cream with roasted artichokes

Beef ragu - slow cooked beef in homemade passata

Amatriciana - home cured pork guanciale style, in housemade tomato sauce with a little kick

Spaghetti and meatballs like you never had - tender Italian meatballs, housemade tomato sauce, parmesan

Pasta alle vongole - manila clams cooked in cider, toasted brococoli and seasoned breadcrumbs, spinach/parsley pesto style sauce.

Pasta alla Puttanesca - with tender poached fish
(Salmon or Dory)

Pasta alla Norcina - Norcina style homemade sausage, white wine, cream and linguine

Wafu Seafood pasta - clams, mussels, shrimp cooked in sake and mirin, tomato passata with some aromatics.

200 per order (good for 1-2 people)
400 for half tray (good for 4 people)
800 full tray (good for 8 people)

Since the name of my place is now HAFU, meaning half. I do riffs (versions) on certain items.

These are perfect for family gatherings, birthdays, friends hanging out or even just a nice weekend.

Jambalaya with lechon:
A New Orleans staple made with short grain rice, seasoned heavily with cajun spices and a dark roux.

Traditional Paella:
Well, almost. I swapped wine with sake and mirin and cook the seafood separately to keep it juicy. I use the seafood stock to cook the rice.

Pella Verde:
A riff on the mexican dish Arroz Verde. Its short grain rice cooked in stock, then I fold in a salsa verde/pesto hybrid. Topped with luscious seafood.

Black Paella:
Usually made with squid ink, instead I use Korean black bean paste. Topped with some sliced pork (samgyupsal) and shrimp (replaceable with more samgyupsal)

Roast beef mukbang tray:
Slow cooked beef short ribs with demiglace sauce
Korean style grilled chicken
Rice pilaf or java rice

Lechon mukbang tray:
Same as the beef tray, but with lechon instead

What is authentic ramen?

What does authenticity mean in this context?

It's both simple and complicated.

Making ramen is not easy. You have to know the timing as to how to pull flavors out of the ingredients. Its time consuming and it will test your patience.

When you see, shoyu base, tonkotsu base, etc... it will not convey what exactly that ramen would be.

Shoyu is Japanese for soy sauce. In Japan, there's hundreds if not more than a variety of soy sauce (shoyu). Different types of shoyu differs from the soy beans used, the technique to ferment it, the type of water and so much more. Shoyu is used to make "tare". Tare is what flavors the ramen stock. Its a mixture of salty, sweet, umami laden ingredients. Not just plain soy sauce.

Tonkotsu means Pork bones literally. You use pork bones to pull flavor. It takes time. How much time? It depends. You need the bones to go through calcification in order for the collagen and other minerals to break down. It might take 10 hours to 3 days, depend on what you are targeting.

So in between these two, they cannot be said as "base flavor". They are totally different things.

What is the difference between a stock and broth? A stock usually utilizes bones and is cooked for a long time. No salt. Broth uses bones and meat and usually takes less time. It can also have some salt on it, depends on what you are using it for.

What is authentic then? Authenticity is tricky as its geographical. Its difficult to procure items used in Japan to make ramen here. How do I make it as close to authentic as it should. I get the necessary ingredients and riff on other things. The local ingredients that is used to make ramen at the shop are the vegetables, aromatics and eggs.

I also utilized techniques I learned and studied for 9 years to make ramen as good as what you would get in Japan.

I want to share with everyone here how it should be. No premade items. All in house. From ramen stock, tare, sauces, etc...

I know the shop has fans and I love you for that. We need your continued patronage to ride off this pandemic. Apologies for items not available at a moments notice. Its difficult to keep stocked up when demand is low. That's the reason why pre-orders are preferred.

Anyway, I'm testing a new ramen and will give a heads up when its ready. It's called "Wontonmen".

Salamat ng marami sa pagtangkilik ninyo sa Yujin Ramen.

Ngayon po na HAFU na ang pangalan ng shop, at medyo alangan pa po ang dine in, sinisikap pa rin na matikman ninyo ang mga Japanese food at iba pang espesyal na pagkain na kaya naming lutuin.

Sana nga po may madaling paraan para masigurado ang kaligtasan ng lahat, pero hindi po ganoon kadali.

Habang hindi pa po tayo nakakarating sa "herd immunity", ay pansamantalang open lang ang shop sa takeout at delivery.

Kuya... I have known you for almost 2 decades now and I am still a big fan of your cooking!! I remember you asked me what food I want to eat and the next day you brought it to work ☺️... delish!! You should serve that there... I think everyone would love it! Keep making people smile as they taste the food you made out of love and passion! Not being bias or anything...but you ROCK!! We just had Chicken Kababs with Basmati rice for lunch. We got it from HAFU owned by Eugene Bryan Aquino. It was so good that we didn't even get to take pictures of it. The chicken was so tender, the marinate was perfect, and the dip was awesome. Overall, it was a really great meal. If you live in Morong, check out his menu online. Just search for HAFU. They offer a variety of dishes from Japanese to Italian to Mexican to Mediterranean. Try it you'll love it.

Tried their Tonkotsu Ramen and it was really good! I mean Im not a super fan of Ramen but I enjoyed it alot! A must try! Since they are still in their soft opening, the owner assured that there will be a more variety of dishes as soon as they have their Grand Opening. Cant wait for the expansion of their menu ❤️
