Jamón de Wagyu has been part of the Asador Alfonso menu since day one, becoming one of our signature dishes and a true reflection of our philosophy.

Jamón is one of the most iconic expressions of Spanish gastronomy. Guided by our deep respect for tradition and heritage, we produce our own jamón using ancestral curing methods that have been preserved for generations. But being in Asia inspired us to create something uniquely our own.

Instead of the traditional Iberian pork, we use premium Japanese A5 Wagyu, carefully cured to develop an exclusive Wagyu Jamón found only at Asador Alfonso. The result is a delicate, melt-in-your-mouth delicacy that brings together Spanish craftsmanship and the unparalleled richness of Japanese Wagyu.

A dish that has defined our identity since the very beginning, it remains a testament to our commitment to honoring tradition while embracing innovation.

At Asador Alfonso, we believe the experience begins long before the first course is served.

After the drive from the city, we wanted our guests to have a space to pause, relax, and reconnect with nature before dinner. Designed by Carlo Calma, “The Lagoon” is an architectural sanctuary nestled within the water, a place where art, design, and nature beautifully coexist.
Here, guests are welcomed with light appetizers and our homemade vermouth as they ease into the evening before entering Asador Alfonso.

We are truly excited to welcome you and share what we do here in our home, one experience, one story, and one memorable meal at a time.

The seasons play a big role in what we do at Asador Alfonso. Changing weather conditions and temperatures affect the quality of the ingredients, and we not only utilize the best ingredients Spain has to offer, but we wish to serve them when they’re at their peak.

Currently in season, we focus our gaze on the artichoke. While bottled versions preserved in vinegar are available all year long, fresh artichokes when roasted is truly something to be savored when the opportunity presents itself. As part of our multi-course menu, it exemplifies the importance of seasonality in Spanish culinary heritage.
