Pancit Molo ni Nating

This is also a delicacy one cannot dare to miss when in Ilo-ilo! Pancit Molo is described as the Filipino version of wonton soup, which originated in Molo, Ilo-ilo. It is made of pork dumplings with a rich mix of garlic, shredded chicken and shrimp, and a flavorful broth. The broth will make you crave for more! Nating, the mother of Papi, was one of the few and famous pancit molo makers in the early 1940s, her recipe passed down to Papi. Pancit Molo is one of the crowd favorites whenever the family decides to serve a feast to family and friends. You will know why when you try it!

La Paz Batchoy ni Jorge

You can’t miss this when you go to Ilo-Ilo! La Paz Batchoy is a noodle soup which originated in La Paz, Ilo-ilo. It consists of fresh round noodles (miki), pork and/or beef meat and/or organs, and a flavorful broth (kaldo), topped with fried garlic and fresh scallions (onion leaves). Some Ilonggos prefer eating it with raw egg as additional toppings. Jorge, one of the closest friends of Papi, is one of the famous chefs to cook batchoy in Ilo-ilo. When eating batchoy, one has to finish the kaldo first, before eating the noodles. Don’t worry, unlimited kaldo is on us!
