Try the first two slices with just Maldon salt, youโ€™ll taste the delicate sweetness of the fat. Then add a little garlic for crunch, or fresh wasabi to refresh your palate. The wasabi is there to balance the richness, not overpower the beef.

We serve it at 150g because A5 is exceptionally rich. Itโ€™s a portion chosen for the experience: enough to savor slowly and finish comfortably.
