Box of Dark and Milk Chocolate N°8 at ₱1,400.

I keep this box around for the moments that deserve something more. It comes from Michel Cluizel, a family house in Normandy that has been working with cocoa for three generations. They still select the beans themselves, plantation by plantation, which is rare in chocolate making today.

You can taste the difference. Each bonbon in the box is built around a single origin cocoa, so the flavors stay clean and distinct instead of blending into one note. Some are dark, some are milk, and each one carries its own character. A salted butter caramel ganache. A praline with a little crunch. A lemon ganache that cuts through the richness.

Duck Leg Confit from France, 2 pcs at ₱1,600.

This is one of my favorite things to have ready in the fridge. The duck legs are slow-cooked in their own fat until the meat is tender and falls off the bone. Fully cooked, so all you need to do is warm it up.

I like to serve it simply, with potatoes or green beans. It also works well shredded into a salad if you want something lighter.
