Ever since I was a young boy I always enjoyed rainy days. Gloomy, romantic. Days of hot chicken soup and cuddling next to a loved one.

But recently, rainy days are threats and risk. Now that Iโ€™m a business owner I worry about our team. Homes flooded? Streets flooded, canโ€™t get through? Deliveries done in the rain? Highways blocked?

I donโ€™t enjoy the rain as much as I used to ๐Ÿ˜ฃ

Of course the rain is important for our soil and to clean the environment โ€” but in our large dense city, it comes with much risk. Not to mention โ€” everyone stays home! Rainy days are hard for restaurants.

If you can, visit your favorite restaurants whose employees may have waded through floods and more than additional discomfort just to serve you โ€” be extra nice to them, tip them.

We outgrew our Poblacion kitchen. Packed up everything โ€” even the tandoor โ€” and moved on.

Days later, the city ripped the streets apart right in front of our old place. Perfect timing.

But there was one last surprise: a โ‚ฑ65,000 water bill. We expected the usual three thousand or four thousand.

Turns out the plumbing works busted the pipes. And guess who pays? The businesses.

The unsexy part of restaurants is right here. Itโ€™s not the cooking โ€” itโ€™s the permits, the bills, the lines at the barangay office, the problems that never make it to your Instagram feed.

Two years ago we left One Bonifacio High Street. Weโ€™ve been cooking, growing, plotting our return. Now Kashmir is back in BGC โ€” street level at The Montane, 8th Avenue, right across the Grand Hyatt.

Getting here wasnโ€™t easy. Our tandoor oven almost became a permanent parking lot installation when the trolley snapped in half. But the Montane guards stood watch over it like it was treasure โ€” because it is. We said thank you the only way we know: fresh butter garlic naan, straight off the oven. ๐Ÿซ“
