There is a reason lechazo has been a signature dish at Spanish asadors for generations. The challenge is not in the seasoning or sauce, but in understanding the fire.

Too much heat and the skin burns before the meat is ready. Too little and you never achieve that perfect crackling crust. When done right, the result is crisp golden skin, tender meat that falls from the bone, and a depth of flavor that only time and fire can create.

Our 1/8 de Lechazo is the perfect size for 2-4 guests, served with rich liver sauce, piquillo sauce, and garlic parsley roasted potatoes. A true classic of the asador

A true asador understands that fire is not only for meat. It is knowing how heat and smoke can elevate every ingredient to its fullest potential.

Our paella is a perfect example. The steady heat brings the rice to just the right doneness, drawing out deep flavor while creating that prized crispy socarrat beneath.
