Every cheesecake is baked in small batches, in individual moulds to ensure even heat distribution.

Technically, it’s Italian. But in Spain, we eat it like it’s our own.

In Spain, this only exists for a few weeks a year — the Roscón de Reyes, on January 6th. Orange, orange blossom, candied fruit, and so much Christmas nostalgia.

I grew up eating it once a year, always waiting for January to come around just to have it again.

So I turned it into a cheesecake — same flavor, same tradition, but now available all year round. No waiting for December.
