On World Food Heritage Day, we celebrate not just dishes, but the stories simmering behind them. For our family, that story begins with a humble yet unforgettable pot of 𝗣𝗢𝗖𝗛𝗘𝗥𝗢, an heirloom recipe introduced by Lolo Ady Amor. ❤️

Lolo Ady believed that the heart of a good 𝗽𝗼𝗰𝗵𝗲𝗿𝗼 lay in patience. Into one large pot went chicken, pork, beef/bulalo, and chorizo. Slowly boiled until their rich flavors blended into a comforting, aromatic broth. He kept it simple: just garlic, onions, and spring onions, allowing the natural taste of each ingredient to shine. Everything was sliced and mixed into bite-sized pieces, making it easy to share and enjoy.

Once the meat was tender, in came the vegetables. Cabbage, bananas, potatoes, and Baguio beans. Each one adding color and texture to the dish. But what truly made 𝙇𝙤𝙡𝙤 𝘼𝙙𝙮’𝙨 𝙥𝙤𝙘𝙝𝙚𝙧𝙤 special was the final touch: his signature mixture, it brought everything together in a way that was both bold and deeply familiar.

Cooking 𝗽𝗼𝗰𝗵𝗲𝗿𝗼 wasn’t just about feeding the family, it was a joyful competition. Lolo Ady would challenge his children to see who could create the best-tasting mixture. Laughter filled the dining table as each one tried to outdo the other, guided by his watchful and playful eye.

Back then, Lolo Ady and Mommy Nenette would prepare one bandehado at a time of 𝗽𝗼𝗰𝗵𝗲𝗿𝗼. Ingredients were sliced together in a large bandehado, and when everything was ready, it was served generously to everyone gathered around. It wasn’t just a meal, it was a celebration of family, tradition, and love.

Today, every time we cook 𝗽𝗼𝗰𝗵𝗲𝗿𝗼, we remember those moments. More than just a dish, it’s a legacy. One that continues to bring us together, one bowl at a time. 🍲🍃
