He does not just roast coffee, he competes to showcase the coffee skills of the Filipino.

Meet John Eric P. Enopia, Head Roaster of The Cooking Dad Coffee Roastery and, Farmer’s Brew Facilitator. A 1st Runner Up at the ASEAN Coffee Roasting Championship and the Philippine AeroPress Champion 2024, he competes to showcase the skills and craftsmanship of Filipino coffee professionals on both local and international stages.

This session explores how Philippine coffee is being shaped not just by production and technique, but by the shared efforts of farmers, roasters, and coffee communities. During the pandemic, TCD’s very first product sold online was our own version of Cassava Cake. What started as a way to survive and continue serving our community became the first step of our journey.

From homemade trays delivered during uncertain times to building a brand fueled by passion, creativity, and community, this humble cassava cake will always be part of our story. 💛
