Dear friends and Sabores Followers. Here a short note regarding your questions about the origin of the Dinagyang Festival.
The Dinagyang Festival originated in Iloilo City, Philippines, and its roots go back to 1968.
Origin and History
In 1968, Iloilo celebrated the arrival of a replica of the Santo Niño (Holy Child Jesus), which was given by the Augustinian friars from Cebu.
The event was inspired by Ati-Atihan Festival of Kalibo, Aklan, which also honors the Santo Niño.
Over time, Iloilo developed its own distinct celebration, emphasizing highly choreographed dance performances, dramatic storytelling, and powerful drumbeats.
In 1977, the festival was officially named “Dinagyang,” a Hiligaynon word meaning “merrymaking” or “festivity.”

Dear Friends,

As you may know, we held a wonderful Tapas Event last December 17, 2025. I was pleased to serve nearly 40 participants who truly enjoyed the outstanding work of our kitchen team. Most of the tapas prepared for the event can now be seen in my post.

All tapas were inspired by Spanish regional cuisine, particularly from Castilla y León, and were specially created for this occasion. According to our guests, the experience was truly memorable. They were especially impressed by the crunchy white asparagus and the Cochifrito de Segovia served over a hearty bean stew.

For dessert, in the spirit of the Christmas season, I created a Spanish Turrón de Jijona cream, topped with a praline made from Turrón de Alicante.

I would like to take this opportunity to wish all of you a very pleasant Christmas filled with family and friends, and a healthy, prosperous, and successful 2026.

These Spanish white asparagus from Navarra will be turned into that "Tempura" whose proper craft the Jesuit priests taught to the Japanese. Our “ Spanish Pavía” became "Tempora" (Lent in Latin, food for Lent).
I will serve them over a delicate leek stew.

With great pleasure and excitement, I look forward to seeing you tomorrow as we enjoy the Last Tapas Tasting 2025.
I am currently in the kitchen, inspired and fully immersed in creating new tapas—carefully crafted for those who love discovering new flavors and textures that awaken memories of unforgettable moments and places from our beloved Spain.
I have just shared some images from our most recent session, during which we had the great honor of being joined by His Excellency, the Ambassador of Spain to the Philippines, Mr. Miguel Utray.
And for any “late-deciding” friends still considering joining us, wonderful news: at our “RINCÓN”, we still have five places available to savor the authentic and vibrant flavors of Spain.

My name is Juan Carlos de Terry, Executive Chef and co-owner of EL RINCÓN DE LOS SABORES, here in the city of Iloilo.
I would like to express my heartfelt thanks to you, our friends and loyal guests, for always accompanying us and for following our culinary activities with such enthusiasm and genuine interest. Your continued support inspires us to keep creating and sharing cuisine of the highest quality.
Today, i would like to remind you and confirm that this coming Wednesday, December 17, we will be hosting our final and grand tapas event of 2025, a new and heartfelt tribute to the iconic Calle del Laurel in Logroño, in the renowned Spanish region of La Rioja. This famous street is recognized worldwide as the true Cathedral of Spanish Tapas.
Our tapas are small bites filled with culture and flavor—creations made with the finest ingredients and a deep respect for the authentic culinary traditions of Spain’s diverse regions.
A TAPAS EVENT is, in essence, a true tasting menu, meant to be enjoyed—and even reflected upon—bite by bite, from beginning to end.
I truly hope to see all our friends and followers this coming Wednesday at 7:00 p.m., at EL RINCÓN DE LOS SABORES.
