What forms the basis for current green grading guidelines—and should they be updated to reflect modern science? 🧪

During a recent review, the Coffee Science Foundation (CSF) identified a gap in research connecting physical defects in green coffee to their actual sensory impact. To address it, the SCA and CSF supported a project led by the Zurich University of Applied Sciences (ZHAW) in collaboration with CESURCAFÉ in Colombia. 🔬 In this piece, SCA's Publications Manager, LAUREL CARMICHAEL, introduces the project, and the context that led to it.

For decades, coffee professionals have been trained to remove "imperfect" beans from "quality" ones — a cornerstone of green grading. 🌱 In order to gather scientific evidence about how defects influence flavor, this research will reexamine long-held assumptions and help to ground green coffee standards in science rather than tradition alone. ☕️

We got our hands on the absolutely stunning Data Disco - Bolivia Gesha from Dark Arts Coffee Japan. This Double Washed Gesha, a masterpiece from producers Carmelo Yurija Ticona and Deysi Ramos Carillo, is already exceptional, with delicate notes of Jasmine Tea, Yuzu, and Apricot.

But what if we could make those specific notes shine even brighter?

A touch of Tonik to amplify that sparkling Yuzu acidity and create an incredibly vibrant mouthfeel.

SCA-105 is live. We now have a common way to talk about what makes coffee valuable beyond flavor. New form linked in the post.

Exciting news! 💫 The SCA has published standard SCA-105 as the official method to assess coffee's extrinsic attributes using the Coffee Value Assessment (CVA). We've also released an updated version of the Extrinsic Form, replacing the earlier Beta version.

🗣️ SCA Technical Officer Mario Fernández-Alduenda sums it up perfectly:
"For the first time, the specialty coffee industry has a shared way to talk about what makes coffee valuable beyond flavor—a common language for all the qualities that define its worth."
