MIAG-AO, Iloilo β Akila Shane Cuenco of Fika Specialty Coffee won the Manual Brewing Challenge on March 22, overcoming an early elimination-round loss to secure the championship.
Cuenco emerged at the top of a 15-person field comprising baristas, home brewers, and enthusiasts from Iloilo, Antique, and Capiz. Despite dropping to the losers' bracket after the first round, she completed eight consecutive successful brews to claim the title.
βWinning as a first-time competitor is incredibly humbling,β Cuenco said. βIt represents the transition from being a student of the craft to being someone who can hold their own under pressure.β
The competition, organized by Pakiburak Organization, Inc. and The Box Coffee, aims to showcase regional brewing skills and support Iloiloβs growing specialty coffee community.
Cuenco, who plans to further study the science of specialty coffee, said she hopes her win encourages other aspiring brewers to compete regardless of their experience level.
Ynah Louise Zulueta of Kyo Coffee (Iloilo City) earned first runner-up honors. Jayson Anito of NuWave Specialty Coffee (Iloilo City) and Raymond Santome of Salty Brew (Maasin, Iloilo) tied for second runner-up.
The competition featured beans from local farmers Dan Camod of Sarangani, roasted by Tay Roming Coffee Roasters, and Denz Bert Deramos and Rey John Basco of Senator Ninoy Aquino, Sultan Kudarat, both roasted by La Roasteria.
The monthly event serves as a qualifier for the Pakiburak Manual Brewing Challenge Season 2 Final Leg in December 2026.
