Is it burnt?
-The black surface covering the smoked meat is called the “BBQ bark”. This is where all the flavor accumulates during the long hours of smoking.

“The “BBQ bark” is a hard crust-like substance that forms on the outside of the smoked meat. The bark results from a combination of the dry rub, caramelized sugar, rendered fat, temperature control, and smoke that is cooking on the surface

of the meat.”

•Is it medium-rare?
-Our Smoked BBQ has been fully cooked to internal temperatures of 195-202F. The standard internal temperature for Well-Done meat is 160-165F. The pink hue in Smoked BBQ is a result of the myoglobin not fully breaking down. The Nitric Oxide naturally found in the wood-smoke reacts with the myoglobin that will result to the pink hue.
