Filipinos have the fondness for colorful things such as seen in our jeepneys, sorbetero cart, sapin-sapin, patadyong, festival decoration and....halo halo, the iconic Filipino snack and dessert. Without the purple 💜 ube it is not traditional. .

Colors reflect our culture in the islands for vibrant and happy ways of life in the tropics basked by ever- lovely sun, colorful fishes and radiant hues of flowers. They are reflected in our food as well. With colors come artisanal ways. Purple in halo-halo is a color so Pinoy in this delight. 🟣

At Wawa Cafe in Little Baguio, Estancia, Wawa Cafe Little Baguio Estancia Iloilo ,I am filled with pride as we congratulate Jyn Kaisser Josue who graduated Magna cm Laude in Tourism and Hospitality Management at Northern Iloilo State University, Estancia main campus. Jyn has been one of our pioneering team members since Wawa’s inception, embodying the spirit of perseverance and dedication.

Our social responsibility program has always been about offering opportunities to working students, and Jyn’s achievement is a shining example of what commitment and resilience can accomplish. Sharing in this distinction, I extend my heartfelt joy to Lyn for her unwavering effort. This summer, Wawa Cafe Little Baguio Estancia Iloilo introduces a bold and exotic dish that redefines coastal dining—Estancia Inasal in Sea Oysters. Fresh oysters from Estancia, renowned for their briny sweetness and oceanic umami, are used as marinade in the non-traditional inasal style and charcoal-grilled to perfection. Each meat is bathed in pure achuete oil, giving it a vibrant hue and a smoky, savory depth that is entirely unique.

The dish celebrates the fusion of land and sea, exuding the exotic “templa” that balances flavor and tradition. Diners can choose from three distinctive dips: a guacamole avocado dip, a fiery mixed herbs and shrimp paste (ginamos) chili sauce, and the classic soy sauce with calamansi. To complete the experience, it is paired with either calo-calo garlic fried rice or fragrant yellow rice, making it a hearty yet refined indulgence.

At its heart lies sisi, fermented oysters beloved in Estancia. This coastal delicacy, when used as marinade, infuses chicken with a deep umami that ordinary seasoning cannot replicate!
