CHICKEN INASAL

Ingredients:
2 Chickens (free range if available)
3/4 cup Filipino vinegar
1/4 cup Garlic finely minced
2 stalks Lemon grass optional
Salt
Annatto oil (see notes below)
Wooden skewers
Spiced vinegar

Additional Ingredients Instructions:

2 free-range chickens, approx. 3 pounds each, or if you can find smaller chickens, use 3 of them
3/4 cup Filipino vinegar, palm if you can find it, or cane; or if you must, the equivalent in kalamansi juice (available in the frozen aisle of your Asian market if you don’t have access to fresh)
1/4 cup garlic, minced very finely, or better yet, mashed into a paste with 2 teaspoons sea salt
achuete or annatto oil, made by steeping 1/4 cup annatto seeds in 1/2 cup hot oil for half an hour (If not available, you may mix a small amount of paprika and tumeric to achieve the same color.)
thick wooden skewers, soaked for 1 hour in water prior to cooking
Bottled spiced vinegar for serving, or make your own by mixing Filipino vinegar, lots of crushed garlic, a bit of salt, and a handful of Thai peppers or other tiny red hot peppers

COOKING INSTRUCTIONS:
Quarter the chickens, or if using the small ones, halve them. Marinate in the vinegar, garlic and salt, several hours or overnight, turning several times.
Preheat grill to 350 degrees. Make sure your grill is cleaned and oiled well. Cook over indirect heat for 20 minutes, basting with the achuete oil.
Turn and cook for 10-15 minutes more, or until thickest parts of chicken exude clear juices when pierced. Can also be made in a grill pan on the stove if no outside barbecue is available.
Serve immediately with the spiced vinegar. Other welcome additions to the vinegar: some soy sauce or fish sauce if you like, or even some minced ginger.

Tinolang Manok with Malunggay Recipe

INGREDIENTS

1 kilo Chicken legs choice cuts
1 small young papaya cut into small pieces.
2 tablespoons ginger crushed and sliced into strips
1/2 cup Malunggay leaves you can also use chili leaves
1 liter of water
3 siling haba (chili)
1 to 2 stalk lemongrass
5 garlic cloves minced
5 pieces of tomatoes small sized sliced ( optional )
1 red onion diced
4 tablespoons oil
2 tablespoons patis fish sauce
1 Chicken broth cube

INSTRUCTIONS

In a casserole, heat oil and saute' garlic, onion, tomatoes and ginger.
When the tomatoes are cooked, fry chicken until slightly brown.
Add water and lemongrass.
Bring to a boil, then Add papaya.
Cover and simmer for about 20 minutes or until chicken is tender.
Add Siling Haba (chili) and chicken cube then, continue to simmer for an additional 5 minutes or until papaya softens but not overcooked.
Season with patis or salt.
Add Malunggay leaves then, simmer for additional 2 minutes then, turn off the heat.
Serve steaming hot with plain rice.

CHINESE BEEF BROCCOLI

Ingredients:

1/2 kilo flank or sirloin, sliced thinly across the grain
1/2 kilo broccoli florets
2 tablespoons Sesame cooking oil
2 medium sized onions, sliced
2 cloves garlic, very finely minced or mushed through garlic crusher
1 1/2 teaspoon cornstarch, dissolved in 1 tablespoon water

For the Beef Marinade:

1 tablespoon soy sauce
1 tablespoon Chinese rice wine (or dry sherry)
1 teaspoon cornstarch
1/2 teaspoon freshly ground black pepper

For the Sauce:

2 1/2 tablespoons oyster sauce
1 tablespoons Chinese rice wine (or dry sherry)
1 1/2 tablespoon soy sauce
1/2 cup chicken broth

Cooking instruction:

Marinate the beef:

Stir together the beef marinade ingredients in a medium bowl.
Add the beef slices and stir until coated.
Let stand for 10 minutes
Prepare the sauce:

Stir together the sauce ingredients in a small bowl.
Blanch the broccoli:

Cook the broccoli in a small pot of boiling, salted water until tender-crisp, about 2 minutes.
Drain thoroughly.

To Cook:

Heat a large frying pan or wok over high heat until a bead of water sizzles and instantly evaporates upon contact.

Add the cooking oil and swirl to coat.

Add the beef and immediately spread the beef out all over the surface of the wok or pan in a single layer (preferably not touching). Let the beef fry undisturbed for 1 minute.

Flip the beef slices over, add the garlic to the pan and fry for an additional 30 seconds to 1 minute until no longer pink, Pour in the sauce, add the blanched broccoli and bring to a boil.

Pour in the dissolved cornstarch and cook, stirring, until the sauce boils and thickens, 30 seconds.

Tip: To slice beef very thin partially freeze it, or if frozen, slice before it is completely thawed.

Beef Kare kare Recipe

Ingredients:

1/2 kilo beef shank
1 bundle of pechay or bok choy
1 bundle of string beans cut into 2 inch slices
2 pcs eggplants sliced
1/2 cup peanut butter
1/2 cup shrimp paste bagoong
1 Liter of water
1/2 cup annatto seeds soaked in a cup of water
1 tbsp garlic minced
1 large onion chopped
salt and pepper to taste

Instruction:

In a large pot, add water and beef shank then boil for 3 hours or until tender (35 minutes if using a pressure cooker)
Once the meat is tender, add the peanut butter, and coloring (water from the annatto seed mixture) and simmer for 5 to 7 minutes
On a separate pan, saute the garlic then add the eggplant, and string beans and cook for 3 minutes
Transfer the cooked vegetables to the large pot (where the rest of the ingredients are)
Add the Pechay or bok choy simmer for 2 minutes
Add salt and pepper to taste
Serve hot with shrimp paste.
