Humble Beginnings
Paella was originally farmers' and farm labourers' food, which was cooked by the workers over wood fire for the lunchtime meal.
It was made with rice, plus whatever was abundant around the rice fields and countryside: tomatoes, onions and snails, with a few beans added for flavour and texture. Rabbit or duck might also have been added, and for special occasions, chicken plus a touch of saffron for an extra special colour and flavour.
Paella was also traditionally eaten straight from the pan, in which it was cooked with each person using his own wooden spoon.
Paella was and will always be a sociable and communal dish, wherein families and friends get together for a lively session of eating and celebrating life with gusto.
For this week, we will be welcoming one of our buddies to cook for us, Jino Bhucksasri.
He will be featuring his Paella Negra, wherein earthy hints and seafood will converge, and bind an awesome flavor. Truly a savory dish, that makes you want for more.
