BRAZO DE MERCEDES CUPCAKE

Filling:

8 egg yolks, lightly beaten
1 tsp vanilla extract
1/4 cup cornstarch
300 ml condesnsed milk
300 ml water

Meringue:

8 egg whites
1 cup sugar
1 tsp cream of tartar
1 tsp vanilla extract

Procedure:

For the filling
1. Pour condensed milk into a small pan.
2. In a small bowl, mix water and cornstarch together. Add to the condensed milk and start heating up the pan.
3. While still not too hot, whisk in the yolks, do it slowly.
4. whisk continously, until thick and the texture is of piping consistency. Set aside to cool down. No need to cover, just whisk once in a while so a skin won’t form.

For the meringue:

5. Beat egg whites until foamy then add the vanilla and cream of tartar.
6. Gradually add sugar while continuously mixing the egg whites. Mix until stiff.
7. Bake at 375F for 7-9 minutes, or until the top browns beautifully.
After baking, cool for a bit then pipe the filling into the center of the Brazo de Mercedes Cupcakes.
8. Lastly, dust the cupcakes with powdered sugar.

SIKRETO NG MASARAP NA LECHONG KAWALI. Minsan po ay nagtataka tayo kung bakit ang lechon kawali ni ganito o ni ganyan ay masarap at maganda ang texture. Ituturo po natin dito ang tamang proseso at magugulat po kayo.. (",)

Sangkap:

Karne ng baboy (maganda po ay pigi o liempo na may balat at taba)
2 tasa 7-up o Sprite
2 kutsara na asin
4 butil na bawang (pinitpit)
1 kutsara pamintang buo
2 dahon ng laurel
Mantika (medyo marami po ito pang deep-fry)
patis at kalamansi pamahid
pamintang durog

Paraan:

Sa isang palayok o anumang malalim na cooking pot ay ilagay po natin ang lahat ng sangkap MALIBAN ang Mantika at Patis, Calamansi at Paminta. Punuan ng tubig at pakuluan sa mataas na apoy. Kapag kumulo na ng husto ay takpan, hinaan ang apoy at hayaang kumulo ng 45 minuto. Patayin ang apoy, hanguin at i-refrigerate po natin ng buong magdamag o 8 oras.

Kapag ready na po ay pagsamahin sa isang mangkok ang patis at calamansi. Pahiran ang karne ng baboy. I-prito o i-deep fry po natin ito ng mga 15 minuto o hanggang lumutong ang balat sa medium heat o katamtamang apoy (Iprito po ang karne na may balat at taba ng buo at saka chop chopin kapag pwede na). Hanguin at budbrun ng paminta. Isilbi po ito sa lechon sauce o suka't sili na may paminta. Ito po ang sikreto ng mga masasarap na restoran sa atin.. bon apettite!! (",)

**note: Minsan po ay tumatalsik ng malakas ang mantika kaya mag ready po kayo ng pantakip sa kawali.

Cheezyyy mamon

2 1/2cup cake flour
1/2cup sugar
3teaspoon baking powder
1/2teaspoon salt
10 -12eggyolks(set aside eggwhites)
1/2cup vegetable oil
3/4cup water or fresh milk
1teaspoon vanilla extract or any flavoring you prepare.
10-12 eggwhites
1/2teaspoon cream of tartar
1cup sugar
1teaspon vanilla extract
Melted butter,sugar,grated cheese
Pre heat oven to 350F grease and line ensaymada moulds/cupcake pan/loaf pan any pan you prepared.
Sift together the flour,baking powder,salt and sugar.add water,vegetable oil mix until well blended add eggyolk one at a time.stir in vanilla extract mix until smooth.set aside.beat the eggwhite,cream of tartar and vanilla.beat until fluffy add sugar gradually.beat until stiff.mix in flour mixture and eggwhite mixture(cut and fold method) mix gently until well combine.pour into prepared pan .bake up to 20-25 mins.when done brush with melted butter,sprinkle some sugar and grate some cheese on top 😊
