Iba isn’t just a fruit — it’s part of our story. 🌿✨

Though it is not native here in the Philippines, Iba was introduced to our islands long ago and has since become naturalized in our environment.

For some of us, Iba is part of our childhood.We remember plucking the fruit straight from the tree eating it with salt, daring each other to take a bite. That overpowering sourness would make our faces twisted into the funniest expressions.Hahaha!

In places like Cebu City, Iba is known as an ingredient in Larang — a comforting, flavorful fish soup cherished by many Cebuano families. But here in Calamba, among us Calambahanons, only a few still use Iba in our viands (sud-an).

Our elders once shared stories of cooking Iba in Inun-onan, where its bold sourness perfectly balanced the dish. Sadly, as time passes, many of these culinary heritage practices are slowly fading. The new generation rarely hears about them — and even fewer get to taste and know them.

In our own small way, we include Iba in our menu— and it proudly takes its place as one of our dishes.

Not just as a fruit, but as a meaningful ingredient rooted in tradition and cultural identity🌱

Because preserving culture starts in our own kitchens. 💛

Our Minasa-inspired Cookies✨ close to the original but still special 💛

Minasa Heirloom Cookies

A Filipino heirloom passed down through generations, Minasa is a delicacy from Bustos, Bulacan.

Its roots trace back to the Spanish colonial era, when egg whites were used in construction to help strengthen houses. Rather than wasting the leftover egg yolks, Bulakenyos transformed them into delicate biscuits and cookies — giving birth to Minasa.

The name Minasa, a Filipino translation of “kneaded,” reflects the traditional process of continuously kneading the dough to achieve its distinct texture. The dough is then pressed into intricately hand-carved wooden molds that imprint its signature floral designs. When sago harvests in Bulacan declined, bakers adapted by using cassava flour, determined to keep the tradition alive.

Today, Bustos proudly celebrates the Minasa Festival every January in honor of this beloved cookie — a sweet symbol of Bulacan’s ingenuity, craftsmanship, and cultural heritage. 🇵🇭✨
