When it comes to mastering specialty coffee, you want to learn from someone who has handled the beans from every single angle. Meet 𝗡𝗶ñ𝗼 𝗖𝗮𝗿𝗹𝗼 “𝗡𝗶𝗰𝗼” 𝗛𝗮𝗹𝗶𝗹𝗶 (popularly known as Coach Lambac)—the expert leading our upcoming Specialty Coffee Workshop.
Nico’s coffee journey began in 2014, but his deep dive into the specialty world took off in 2017 in the competitive coffee scenes of Kuwait and Qatar. He quickly rose from Head Barista at The Blind Panda to working with 48East, one of the top premier coffee roasters in Kuwait.
𝗪𝗵𝘆 𝗶𝘀 𝗵𝗲 𝘁𝗵𝗲 𝗽𝗲𝗿𝗳𝗲𝗰𝘁 𝗺𝗲𝗻𝘁𝗼𝗿 𝘁𝗼 𝗵𝗲𝗹𝗽 𝘂𝗽𝗴𝗿𝗮𝗱𝗲 𝘆𝗼𝘂𝗿 𝗰𝗼𝗳𝗳𝗲𝗲 𝗯𝘂𝘀𝗶𝗻𝗲𝘀𝘀?
𝗚𝗹𝗼𝗯𝗮𝗹𝗹𝘆 𝗧𝗿𝗮𝗶𝗻𝗲𝗱 & 𝗦𝗖𝗔 𝗖𝗲𝗿𝘁𝗶𝗳𝗶𝗲𝗱: Nico holds official Specialty Coffee Association (SCA) certifications in Green Coffee, Roasting, and Sensory Skills from a certified SCA campus.
𝗔 𝗥𝗼𝗮𝘀𝘁𝗲𝗿’𝘀 𝗘𝘆𝗲 𝗳𝗼𝗿 𝗤𝘂𝗮𝗹𝗶𝘁𝘆: He doesn’t just brew coffee; he builds it from the green bean up. As a full-time professional roaster since 2021, he understands coffee profiles, processing methods, and varieties on an elite level.
𝗔𝗻 𝗘𝗻𝘁𝗿𝗲𝗽𝗿𝗲𝗻𝗲𝘂𝗿 𝗪𝗵𝗼 𝗨𝗻𝗱𝗲𝗿𝘀𝘁𝗮𝗻𝗱𝘀 𝗬𝗼𝘂: After years abroad, Nico returned to the Philippines to open his own roastery. He knows exactly what it takes to navigate the shift from commercial/commodity coffee to premium specialty grades.
This isn’t his first rodeo—this will be Nico’s 3rd time facilitating this specialized workshop. He is back home with a clear mission: to share the global standards, sensory secrets, and practical knowledge he mastered from international experts straight to local café owners and brewers who want to stand out.
