At the Counter

Last year, when we were planning our Nagoya trip, one place immediately stood out to me: .no.ma . Even before the trip was finalized, I already knew this visit would be a highlight. We just had to sit at the counter.

personally served us. I had the Asagasumi blend brewed in the syphon with their bonsai cake, followed by a Taiwanese Jin Xuan oolong prepared the same way. Every movement was deliberate. Every cup felt refined and deeply considered.

His drinks are priced higher than most cafés, even within specialty coffee. But seeing firsthand the precision, discipline, and years of dedication behind each brew made it completely justified. You’re basically paying for a full experience made possible with artisans behind the bar.

Yoshinobu Nakayama may not be a household name in the broader coffee media world like Hoffman, Hedrick, or Kasuya. But, within the world of syphon coffee, his work carries serious weight. His competition presentations shaped how I studied and understood the brewer in the early cafe days.

If you scroll back through older posts on this account, you’ll find a rather janky video of me attempting to brew with the syphon using almost the same recipe and technique he demonstrates in competition. That's how far his influence reaches, from Japan to a small café in the Philippines. When I told him this, he was pleasantly surprised his work had traveled that far.

As a gesture of gratitude, I gifted him a bag of our Single Origin Mt. Matutum from , along with dried mangoes from home. Mt. Matutum is one of our staple offerings at Hayahay, and something I’m proud to serve daily. Sharing it felt like sharing a part of who we are as a café.

He traded us a postcard of him and his Shiba Inu, .yoake , and a signed syphon stirring paddle. They are now framed together on our café wall.

There's no music in this post. Just the sounds of his café. Flame. Glass. Water rising and falling. Conversations in the background.

If you’re ever in Nagoya, make the time to sit at his counter. This experience is definitely something I’ll carry with me every time I light the burner at Hayahay.

From the street to the slow bar, welcome to Cafe Hayahay, a calm corner made for good coffee, comforting drinks, and unhurried moments.

We care about how things are brewed and served, but even more about how people feel in the space, unpressured, welcomed, and at ease. We source most of our primary ingredients locally and with intention, while thoughtfully integrating imported ingredients when they make sense.

At its heart, this is a community-first café that values warmth, inclusivity, and everyday rituals, where you can sit quietly, bring your whole self, share a table, or linger without being rushed. Rooted in gentleness, intention, and solidarity, Cafe Hayahay is a place to slow down, breathe, and feel at home.
