Our first time working with fresh yeast. It has a shorter shelf life, needs to be refrigerated, and harder to find in America. Some say bread tastes better with fresh yeast, but in our humble opinion bread always tastes good no matter what.

Yay it’s the weekend! Time to make these simple petit pain (small bread) 7 oz warm water, 95-105f (35-40c)1/4 tsp sugar2...

Yay it’s the weekend! Time to make these simple petit pain (small bread)
7 oz warm water, 95-105f (35-40c)
1/4 tsp sugar
2 tsp active dry yeast
1/4 tsp kosher salt
2 cups APF
-Mix salt and flour together
-Mix warm water and yeast together, separately. Allow yeast to bloom, 5 min
-Add yeast mixture to flour
-Mix in stand mixer until sides are clean and dough is smooth
-Remove from mixer, lightly cover in oil, cover with towel and allow to proof for 1 hour
-After an hour, punch down, cover again and allow to double in size, another hour
-Remove from bowl and knead a few times until smooth
- You can divide the dough into 4 small mini baguettes or even smaller balls
- After dividing and rolling into shape, allow to rise and rest for 45 min
-400 F (205c), bake for 20 min
*Baker’s tip, lightly spritz dough with water and dip into or sprinkle with spices like oregano, poppy seeds, sesame seeds

Have you ever made homemade butter? Did you know it’s super easy to make? It’s literally one ingredient: heavy cream. Or two if you count the pinch of salt. Just whisk the heavy cream either by hand (yes it’s not too hard to do, we did it this way!) or if you’re pressed for time by using an electric mixer. Just mix until the fat separates from the buttermilk, and voila you have delicious homemade butter. It’s so good, you can really taste the richness and flavor of the cream. And what can you do with the leftover buttermilk? Pancakes of course! Private wine and cheese tasting in the commercial kitchen.
