Recently, an incident in Cebu which involved a restaurant diner and a staff became viral because of misgendering. Taking that into consideration, we here at Farmer’s Daughter wish to apologize to anyone we may have misgendered.

We also kindly ask our dear diners to please correct us if we ever misgender you.

Howdy Farm Friends!
Whenever diners ask us who the ‘Farmer’s Daughter’ is, we jokingly answer — ‘Nasa Farm po’ 😁.

But kidding aside, Farmer’s Daughter is a collective term which honors the daughters of farmers, namely the Lolas, the Mothers, and the Wife of the owner of the restaurant. —That of which without them, the restaurant will not be of existence.

Lumaki po sila sa farm serving the traditional foods of the mountain region —which the restaurant continuously strive to uphold, preserve and promote.

This sausage is oftentimes made by designated butchers [‘partidor’] during an Igorot traditional festivity. The excess sausage casings from making pinuneg are used and are stuffed with different pork scraps such as innards and excess meat from the butchered pig.

P.s. The terminology may differ from one place to another, one Igorot tribe to the other, but the most common names are the two stated above.

These slabs of local pork meat are cured in salt and are afterwards hanged under the scorching sun. A traditional way of preserving meat.

Etag is an ideal add-on to soup-based dishes like ‘Pinik-pikan’, ‘Inanger’ and ‘Fuker’ to add a distinct salty & earthy flavor.

• The Process
— These entrails sausages are salt-cured for a week. Seasoned with herbs and stuffed. Smoked and vacuum packed.
— Best with boiled or stew dishes, as toppings for noodles or ramen and other asian noodles.
