There is always a thrill to a journey thru the mountains of the Cordilleras. The terrain, the view, the people and the gastronomy experience seem familiar but refreshing --always in a good way. The beauty of these destinations are deeply rooted in the strength of its thriving communities, its culture and rich natural resources. I can see how these are translated in their simple ways of preparing food. The dishes, heartily cooked by the locals, create complex experiences for the curious who pass through and feast their eyes on the spread.
