A University of the Philippines (UP) Diliman study found that burong isda, a traditional Kapampangan fermented fish dish, contains Limosilactobacillus fermentum (L. fermentum), a probiotic bacterium that supports gut health and enhances immune function. The bacteria can survive the harsh acidity of the human stomach and exhibit antifungal properties.
Key Findings of the Study:
Probiotic Potential: Researchers isolated two strains of Limosilactobacillus fermentum (previously classified as Lactobacillus) from burong isda samples collected in Arayat, Pampanga.
Health Benefits: These bacteria are "good microbes" that help balance gut health, produce essential vitamins (B1, B2, B6, B9), and bolster the immune system.
Antifungal Properties: The study discovered that these bacteria can inhibit harmful fungi, including Candida albicans and Aspergillus fumigatus, which cause infections.
Safety Profile: The strains were found to be non-pathogenic, safe for consumption, and possess no significant risks of transferring antimicrobial resistance.
Research Team: The study was conducted by researchers from the UP Diliman College of Science National Sciences Research Institute (UPD-CS NSRI), including Joshua Veluz, Paul Christian Gloria, Dr. Maria Auxilia Siringan, and Dr. Irineo Dogma Jr. from the University of Santo Tomas.
