Iced Ube Macchiato sa BS, ano tara?

Ube, the purple yam native to the Philippines, is rapidly becoming the internet’s new favorite food—and is now challenging matcha for the top spot in global food trends.

As demand surges in cafes and major brands like Starbucks and Costa Coffee, entrepreneurs are struggling to source authentic ube. French startup founder Jeffrey Cesari had to travel to Bohol in Central Philippines to connect directly with farmers after finding unreliable suppliers and inconsistent products online.

Despite rising exports, ube production in the Philippines is declining. Farmers are hesitant to grow more ube due to long cultivation times, weak market access, and lower profits compared to faster-growing crops, leaving middlemen to capture most of the gains.

Global pressures are adding strain. Rising fuel costs tied to geopolitical tensions have increased farming expenses, pushing prices higher and limiting supply—even for local buyers. Bulk purchasing by businesses is also making it harder for everyday consumers to access ube products.

Ube’s popularity is exploding and edging out matcha—but without stronger supply chains and better support for farmers, the trend may be difficult to sustain.
