Seafood Pakbet (Pinakbet na Seafood) is a tasty twist on the classic Ilocano dish, replacing pork with shrimp, squid, or fish while keeping that rich bagoong flavor πΏπ
π₯ Ingredients
1/2 kg mixed seafood (shrimp, squid, and/or fish like bangus)
1 ampalaya (bitter gourd), sliced
1 eggplant, sliced
1 cup squash (kalabasa), cubed
1 cup okra
1 cup sitaw (string beans), cut
1 tomato, chopped
1 onion, chopped
3 cloves garlic, minced
2 tbsp bagoong alamang
1/2 cup water
Cooking oil
π³ Instructions
SautΓ© base
Heat oil, sautΓ© garlic, onion, and tomato until soft and fragrant.
Add bagoong
Stir in bagoong alamang and cook for 1β2 minutes.
Cook the hard vegetables first
Add squash and a little water. Cover and cook until slightly tender.
Add remaining veggies
Put in eggplant, sitaw, and okra. Simmer until almost cooked.
Add seafood last
Add shrimp, squid, or fish. Cook just 3β5 minutes (seafood cooks fast!).
Add ampalaya
Toss in ampalaya last to avoid too much bitterness. Cook briefly.
Serve
Best enjoyed hot with rice π
