Chaco is an edible clay used in the Andes since pre-Hispanic times, especially from the Puno region.

Part of our tasting menu since 2018 - in the crisps, in the huatia, forming the base of the ninth step (2,700 masl), and in the pairing for the fourth step (4,200 masl), blended with cabuya nectar.
