People see a beautiful restaurant.
The design, the plates, the flowers, the music, the atmosphere.
But behind every small restaurant there are things nobody sees.
A year of building and designing everything ourselves.
Sleepless nights. Anxiety. Deliveries that never arrived. Staff shortages. Full restaurants where, 10 minutes later, we are washing dishes ourselves in the kitchen.
Sometimes we get a 5-star review that reminds us why we started.
Sometimes we get a 1-star review that genuinely affects the business more than people realize.
Not every day is perfect.
Not every dish is perfect.
Not every guest will understand what we are trying to build.
But small restaurants are not corporations.
They are people risking their money, energy, relationships, sleep and mental health trying to create something meaningful.
Every table matters.
Every review matters.
Every guest matters.
And honestly, sometimes we still go to sleep wondering:
will this place survive another season, another month, another year?
But every morning we open the doors again.
And maybe that’s the most real part of all
