This morning the kids and I created these for after school snacks. They turned out delicious soft and chewy with lots of flavour, kids ate them and I was happy with a bar full of clean ingredients.
We will make a nut free version for school lunches with sunflower meal.
🍓Strawberry Lunchbox Bars🍓
Makes 10–12 bars
Ingredients
* 10 g chia seeds
* 110 g rolled oats
* 35 g plain flour or GF flour
* 20 g unflavoured collagen powder
* 20 g almond meal or sunflower meal
* 20 g Red Bridge Berries strawberry powder
* Pinch of sea salt
* 60 g pure maple syrup
* 20 g butter, melted or coconut butter
* 5 g honey
* ½ tsp vanilla extract
* 20–30 g warm water
Method
1. Grind the chia seeds in food processor, or thermomix
2. Add the dry ingredients
Add rolled oats, plain flour, collagen, almond meal, strawberry powder and salt.
Mix 5 -10 seconds
Keeping the oats relatively whole.
3. Add the wet ingredients
Add maple syrup, melted butter, honey, vanilla and warm water.
Mix aprox 20 seconds
4. Rest
Leave the mixture for 3–5 minutes to allow the chia to hydrate.
The mixture should be soft, sticky and hold together when squeezed. If it’s still a little dry, add another 5-10g warm water and mix briefly.
5. Press
Press very firmly into a baking-paper-lined tin, approximately 1.5 cm thick.
6. Bake
Bake at 150–160°C until just set, approximately 15-20 minutes. Want the surface shine to disappear but not to be browning.
The surface wet look should disappear but not browning, the centre should still feel soft. Don’t wait for it to become firm in the oven.l. That’s what gives them that soft, chewy lunchbox-bar texture
7. Cool completely
Leave in the tin until completely cool, then slice into 10–12 bars.
