Did you know that Vietnam is the world's second-biggest coffee exporter — and there's a good chance you've had it without knowing.

New Zealand imports a serious amount of Vietnamese robusta beans, and they end up in a lot of instant coffee and blended espresso on our shelves. But the real fun fact is how Vietnam drinks it: cà phê trứng (egg coffee), a Hanoi specialty where whipped egg yolk, condensed milk, and sugar are beaten into a custardy foam and poured over strong coffee. It tastes like tiramisu in a cup — sounds wild, but it was invented in the 1940s during a milk shortage, when a bartender at the Sofitel Legend Metropole used egg yolk as a cream substitute.

So next time you're sipping a flat white, there's a decent chance the beans took a detour through Vietnam first — and if you're ever in Hanoi, the egg coffee is non-negotiable.
