Palliser Wine

Palliser Wine For over 30 years, Palliser has connected people through our crafted Martinborough wines that speak of site, season and soul.
(1)

We focus on Pinot Noirs and Chardonnays, still and sparkling, organic and on their way to being organic. The weathered and wild Cape Palliser (or Mātakitaki-a-Kupe). The southernmost point of the North Island, on the remote Wairarapa coast of New Zealand. It’s where the Ruamahanga River, the life source of our vineyard land meets the sea, and from where our weather patterns unfurl. From Kupe to Co

ok, Palliser Bay has long been revered by explorers and pioneers in seeking out a new world. Our name reflects the bold courage and pioneering spirit of those explorers; the connection between people, and the land, river and sea of our Martinborough home; and the wild weather that challenges us to craft wines and experiences of exceptional quality.

New Release | Estate Chardonnay 2025.

One of our first releases in Palliser's evolved look. The 2025 Estate Chardonnay is an elegant and complex expression of Martinborough Chardonnay, with aromas of crème brûlée, stonefruit, sea spray, florals, and toasty French oak. Rounded and creamy on the palate, it offers wonderful weight and length.

A beautiful food wine, it's very much at home alongside fresh seafood, or roast chicken.

Available now at Cellar Door or online: https://www.palliser.co.nz/wine/palliser-estate-chardonnay-2025

PEOPLE OF PALLISER

Ivor plays a vital role in caring for our organic vineyards, bringing incredible skill, team leadership, creativity and attention to detail to everything he does. Here's a little more about the man behind the vines.
---

What's your favourite Palliser wine + music pairing?

A glass of Syrah from our Pinnacles Vineyard and some tunes from Tiki Taane.

---

Greatest wine myth you'd like to debunk?

This is more myth-confirming than myth-busting sorry... I'd love to say "heard it through the grapevine" isn't true, but everyone really does hear everything in the vineyard.

---

Best piece of wine career advice you've received?

Wear your safety gear!

---

If you weren't working in viticulture, what would you be doing?

There are a few options. Running a market garden, building garden sculptures, making furniture, driving tractors, breeding kunekune pigs and silkie chickens, or perhaps decorating cakes. I've always enjoyed making and building things.

---

Ultimate wine experience on your bucket list?

I'd love to visit Emiliana Organic Vineyards in Chile, the world's largest organic and biodynamic winery. I met one of their team at an organics conference a few years ago, and it's been on the list ever since.

---

Thank you so much Ivor. We truly appreciate the care, craftsmanship and quiet dedication you bring to our vineyards every, single, day.

"Palliser Estate’s Hua Nui Pinot Noir 2024 earned 97 points and a platinum medal, placing it at the forefront of current New Zealand Pinot Noir releases. It's a powerful wine with the characteristic earthy aromas and firm dry tannins captured in a full bodied style that are the hallmarks of the best Martinborough Pinot Noir.

It's made from the organically farmed Hua Nui Vineyard on a sunny site in the heart of Martinborough village. The name Hua Nui is te reo Māori for abundant."

An interesting read on NZ's successes at the recent Decanter Wine Awards by wine writer Joelle Thomson: "A common thread at world's biggest wine awards (for Aotearoa) - Pinot Noirs pay back dividends to winemakers' dedication".

New Release | Estate Syrah 2025.

One of our first releases in Palliser's evolved styling.

Elegant, expressive, and distinctly Martinborough, our 2025 Estate Syrah is now available online and at Cellar Door.

Just the second vintage of this wine, it offers fragrant notes of violets, plum, boysenberry, leather, pencil shavings, and freshly cracked black pepper. Fine chalky tannins give way to a silky, refreshing finish with great brightness and length.

A wine made for the winter table, pairing beautifully with venison, wagyu, beef carpaccio, or smoky vegetable dishes.

Shop: https://bit.ly/Estate-Syrah-2025 and at Cellar Door.
