SEASONAL DISH: PHỞ (FUH)
For the upcoming cold months,

Rice Noodle, House Recipe Phở Broth, Confit Brisket, Onion, Coriander, Spring Onion. On the side there is some Lime and Sriracha.

My parents used to own a Phở House back home, so this recipe has been in the family forever. And as far as I can remember, I’ve taken naps and “worked” there. So that’s a trip to memory lane :-)

This is our first ever Spooky’s Chilli Crisp. It was inspired by my trip to Christchurch. And also this is the launch for Spooky’s new project

This is, what we’d like to say, a cross of Salsa Macha and LaoGanMa (老乾媽), where we feature 6 types of Mexican Chillies for some heat and fruitiness, some nuts and seeds for the crunch factor, and instead of fermented Beans, we have Bread Dough Miso, which was aged for a year.

This is a part of Spooky’s Re-Slice-Cle project, where we find ways to reuse the dough that we cannot serve.

Introducing the Pizza Chef Counter, “Chef” Counter, whatever floats your boat:

So we sold the coffee machine, wish it well in the new place (be well bae🥹 love ya🫶). And so we were left with an extra counter.

Aaaaaaand, we turned it to a Chef Counter (logical, I know).

Vinh for scale, this table should fit 2-3 people.

Tuesday 17/03 I’ll be attending an event related to sustainability in food business, which is a huge thing for me in case I haven’t told anybody. The event is from 9:00AM to 11:30AM, which means we’ll aim to open Spooky at around 12:30ish.

Rest of the month is looking normal, I guess…
