Sometimes, we're simply looking for a place to slow down.
A place where the warmth of a bowl of phở gently chases away the winter chill. A place where the aroma of freshly brewed Vietnamese coffee invites us to pause. A place where a crispy bánh mì and a quiet corner are all we need to make the day feel a little lighter.
There are days when life moves too fast. Work, family, responsibilities… they quietly fill every moment.
Then, for just a little while, we sit down.
Watching the steam rise from a bowl of phở 🍜. Holding a warm cup of coffee in our hands. Listening to soft conversations, gentle music, and the comforting sounds of a busy little restaurant.
In those ordinary moments, we remember that happiness doesn't always come from something extraordinary.

The best dishes aren't always born in fancy kitchens.

Sometimes they're born in smoke.

That winter in New Zealand was brutally cold. After helping a mate with yard work, we circled around a bonfire with cheap beer, barbecue, and whatever stories people tell when the night gets long.

Eventually the firewood ran out.

So we started feeding the fire with random branches.

One of them carried leaves I'd never seen before.

As they burned, the smoke curled through the fat dripping from the barbecue.

Then it hit me.

For a split second, I wasn't standing in New Zealand anymore.

I was back in Vietnam, smelling bò lá lốt—lemongrass beef wrapped in betel leaves. Growing up, beef wasn't an everyday meal. It was something reserved for weddings, celebrations, and the rare occasions when the family could afford it.

Memory travels through smell faster than anything else.

Before I went home that night, I slipped a handful of those leaves into my jacket.

The next morning I learned their name: kawakawa.

The locals spoke about its healing properties. I kept thinking about its flavour.

So I started cooking.

Week after week. Batch after batch. Successes, failures, burnt meat, overpowered herbs, recipes that almost worked.

Eventually I found the balance.

Vietnamese technique.

New Zealand ingredients.

One story.

When a Matariki cooking competition came along, I entered the dish.

It came home with Runner-up.

Seven years later, that same Lemongrass Beef Wrapped in Kawakawa Leaves is still one of our signature dishes.

People often ask where recipes come from.

Mine came from a bonfire, a memory, and a native leaf that reminded a Vietnamese chef of home.
