Blog # 6 Feeding the Village: The True Measure of a Milestone.
Reflecting on the joy of community, traditional flavours, and the quiet growth of a home-based kitchen.

There is a distinct and quiet type of chaos that comes with preparing food for a massive community gathering. And that's just what goes on in my head!

You look out at a room full of people. They are laughing, talking, and enjoying traditional flavours made entirely from scratch. Suddenly, the long hours melt away. The heavy trays, the early morning prep, the endless counting. It doesn’t matter anymore.

In our culture, food isn’t just a commodity to be sold. It’s a language of care, connection, and celebration (The three C’s!). It’s how we show up for each other.

Lately, I’ve been doing a lot of looking out at those rooms. And it’s made me reflect on how far this home-based kitchen has actually come.

When I first started this journey four years ago, my goals were simple. I wanted a way to keep my hands busy. I wanted the flexibility to still be 100% present for my kids’ sports and family dinners.

But I took it seriously from day one. No cutting corners. I made sure I was fully registered before pursuing anything, mostly because I had a healthy fear of the tax man!

If you had told me back then that my little home setup would scale to managing the logistics for milestone local festivals and large-scale celebrations, I probably would have laughed and thought, ahh, what!?

But growth happens quietly when you focus on doing good work.

In fact, my business recently crossed a massive official milestone. The kind that requires a lot of extra paperwork. A few more columns in my spreadsheets. A formal acknowledgment that this kitchen is a major player in the local catering scene.

I won’t bore you with the technical tax terms or the specific financial brackets. Let’s just say the government and I are on a much closer first-name basis now!

Reaching that benchmark made me stop and realise something important. You can build a highly successful, legally solid, high-volume business without ever sacrificing your peace, your family, or your cultural values.

Hitting big operational milestones is great for the books, but the real reward is still found right here in the kitchen.

For me, success is being able to set my own schedule. Watch my favourite shows, roll fresh buns or prep savoury platters entirely on my own terms.

When you scale up too fast into commercial storefronts or food trucks, you can lose that intimacy. You stop focusing on the food and start focusing entirely on the overheads.

But hey, you do you! Whatever works for your business journey! Your money, your dream.

For me, choosing to stay home-based has managed to protect the magic of what I do. I get to keep my business collective, grounded, and deeply tied to the community events that give it life.

They say in business that you should ‘dream big and plan small’.

Right now, my head is entirely focused on the future. Soon, I’ll be stepping away from the high-pressure, intricate custom work, but I am definitely not stepping away from the baking. Instead, I’m shifting my focus to opportunities that truly align with my love of community support.

I want to focus on the things that are not only my favourites but my customers favourites too! The big morning teas, trays of brownies, and the fresh coconut buns that bring people together for a good cause. For me, success isn’t about how many corporate contracts I can sign; it’s about how many times I can use my kitchen to show up for the people who need it. My very tiny kitchen that still amazes my friends and family when they see it with their own eyes how we manage to pump out the things we do. I just say, I work with what I got, and if it doesn’t work, I figure it out, solve the problem and it works- for me.

We don’t need to shout from the rooftops or copy the flashy online trends to prove we’ve “made it.”

Sometimes, the quietest growth speaks the loudest.

✨Pink, colourful, and pretty: absolute perfection for Astarialee’s 6th birthday! 💕🦄✨

🎉A massive Happy belated 6th Birthday to Astarialee, and a huge thank you to her amazing Mum for your continued love, trust and support. We appreciate you always! 🥰

Blog entry #5: Distinguishing Growth from Noise

Why a focused business mind has to learn to downsize the clutter to protect the one asset that drives consistent revenue.
--------------------------------------------------------------------------
“What’s that for?” asks my son one day as he sees me ponder over a weird-looking object that I’m holding at Spotlight.

“It’s for my business”, I reply. But I’m really thinking, ‘Mind your own business and let your Mum indulge!’

And that’s the thing. I had a hard time filtering my brain to make sure that I make the right decision when it comes to buying for the business. Or buying because I have to make sure I get the latest tool all the home-bakers are using.

In my defence, one fondant cutter letter, the letter A for example, is always the one that gets the most use and is always worn down… and they don’t sell letters separately. So the need to purchase a new set is validated. Have I thrown away the other set? No. Not yet. It’s on the ‘to-do list’. But here’s a question for you: don’t you have something that you keep for those just in-case moments, or is it just me?

I might have a problem. Someone call 0800 Hoarders!

The irony of all this pantry hoarding is that my absolute number one seller, the item that consistently sells out at markets and keeps customers coming back repeatedly, requires exactly zero trendy gadgets. It’s my triple chocolate brownies!

Years ago, I actually posted my cherished, adapted version of that recipe (shoutout to Chelsea Winter and my older sister’s Edmonds Cookbook legacy) right on my personal Instagram page. It’s still floating around out there in the archives if you scroll back far enough. Yet, despite giving away the blueprint, people still line up for them. Why? Because the success didn’t come from a specialised silicone mold or a viral TikTok stencil; it came from consistency, time, and mastering a staple. I haven’t changed that recipe in years, and I never will. It turns out, you don’t need to reinvent the wheel, or buy the entire baking aisle to build a signature product.

Which sounds incredibly profound and wise, doesn’t it? If only my actual spending habits listened to my own good advice!

Just kidding. The four sets I do have are all different typefaces and I only use one. So, I guess I could throw the other three away but I know I will regret it. I mean, it really is a business investment and one day I may need the letter K or J - letters that are not as popular… Anyone want to order a cake or brownie that has these letters? Holla at me!

This reminds me of what I mentioned about in an earlier blog about ‘copycat syndrome’. I see how ‘they’ have decorated their cake, therefore I must get that cool tool too! I’ve realised pretty early on in my small business era, I don’t really need ‘it’. Therefore, I have learnt that I have to use what I have and be happy about it.

Because if I stress over what others are doing, how will I ever find out if I really enjoy this or am I just doing this to be popular and/or to make sure I don’t get left behind?

The Power of Staying Small: Why I Refuse to Grow My Business
Turning down storefronts and food trucks to protect my freedom, my family, and my sanity.

If I had a dollar for every time a well-meaning friend, family member, or acquaintance suggested that I should move into a physical shop, buy a food truck, or scale up my business, I’d probably have enough to fund the store-front they keep dreaming up for me.

I know these comments come from a place of love and excitement. They want to see my name up in lights, and I appreciate that. But it always makes me pause and think: Do they truly understand the weight of what they’re suggesting? Suggesting a store-front is easy. Carrying the physical load of it is entirely different. Unless someone is volunteering to be there with me at 4am to lift the heavy crates, manage the overheads, and bake through the night, those big ideas remain just that- ideas.

Most people wouldn’t walk into a corporate office or a local trade and tell someone how to do their job, yet there’s a funny assumption that independent business owners are always looking for unsolicited direction. I’ve had to hold my tongue more times than I can count. The reality is, they see the beautiful final product, but they don’t know the day-to-day grind. And more importantly, they don’t know my daily life.

The Comfort of the Counter.
When I work from home, I get to schedule my routine entirely my own way. Time management and operational structure happen to be things I am genuinely great at. It hasn’t always been seamless, and unexpected chaos absolutely pops up to disrupt the day, but I always find a way through it. This business has taught me a vital lesson: there is always a solution to everything. Sometimes that solution is incredibly hard to swallow and isn’t the one you favored, but you just have to pull up your sleeves and get on with it.

There is a distinct magic to running a micro-business. I can watch my favorite Netflix series from the comfort of my own kitchen while baking 100 cupcakes or rolling fresh pani-popo buns. I am my own boss, setting my own pace.

Baking Through the Grief.
It hasn’t always been smooth sailing, though. There was a dark period when the weight of life felt too heavy, and I seriously considered packing the whole thing in. It was right around the time my father passed away. I felt entirely drained of energy and simply didn’t have the heart or the spirit to carry on.

But my husband Kalani stepped in and gently told me to keep at it. He knew from his own experience of losing his Dad a few years prior that grief never truly leaves you, but keeping your hands busy can help you move forward and keep the sadness from completely consuming your mind.

He was right. And honestly? I know my Dad would be incredibly proud to see me pushing through. Before he passed, he saw how much joy it brought me to work from home- to have a thriving business while still being entirely present to take my kids to sports and come home to prepare dinner for my family.

The Next Evolution.
Even though the road has been incredibly tough, I am happy to say that the hardest miles are firmly behind me. I am finally genuinely enjoying the daily process of being a small business owner.

Yet, as I find my feet, I feel like I am ready to step into the next phase of my journey. My passion has been evolving, and right now, my head is focused on maybe dropping the high-pressure custom cakes and focusing fully on the savoury, community-style catering side of the business... but who knows? That's the 'joy' of working for myself. I get to decide what comes next.

It is still early days for planning the transition, but that is where my heart is leading me. They say we should “dream big and plan small” - and right now, my dream is a lot bigger than my current operations, and that is exactly how it’s supposed to be.

✨️ Celebrating milestones with meaning! 💙
Back in April, I had the honour of creating this special 21st birthday centerpiece for a wonderful family celebrating their son, Mosese.

🇳🇺 🇹🇴 Honouring his Niuean and Tongan heritage, this custom design features hand-crafted fondant detailing and a custom topper made right here in the kitchen. Underneath that crisp blue-and-white finish is a crowd-favourite: rich Red Velvet layered with smooth vanilla buttercream filling.

🥳 Wishing Mosese a massive Happy 21st Birthday! Thank you to your parents Louise & Brian for letting me be a small part of your big day! 🎉

>Hustle vs. Humility. Navigating the identity crisis of being a reserved Pasifika entrepreneur in a modern business world.<

I was raised to believe that a vault is a sign of strength... you listen intensely, observe the room and let your hard work do the talking. So you can imagine the absolute identity crisis I felt when I entered the modern business world!

To my core, I loathe talking about my business or bragging about myself. Yet, I have no worries talking about my family, my kids and the things that make me who I am. That comes out naturally. But having to shift that mindset to something foreign is, well... foreign.

When I was studying at university, I found it quite hard in tutorials and group discussions.

In my culture, speaking up, speaking out loud and sometimes out of turn (like debating over a certain topic) just wasn’t something I was used to. It probably doesn’t help that I am an introvert and would very rarely speak up.

However, I do think I speak with intentionality without even knowing it. Like in my last post, feeling old and past my time? I think I have an advantage of life experience and other things that I classify as "expert" but not really feeling like one? Imposter syndrome anyone! This is a deeply rooted stigma that I have found in a lot of people feel, especially my pasifika and māori friends, when they really are more than capable and always overqualified in so many ways.

I mean I would love to stand outside my house or just beside my stall and call out, “Omai, omai ke kai! Come and try a taste of the Pacific!” or “Come and try our triple chocolate brownies!” I was actually quite jealous of my fellow stallholders at one market, who had one of their workers shout out, “Hello! You like Korean? Come and try our food!” I tried something like that once. “Hey there, how’s it going guys?!” I said, trying to sound enthusiastic.

But then I got crickets... nothing. No feedback or even a hello. Just a nod, a quick overview of my products and my sign and they walked on by. I thought, 'Okay.. maybe let’s not do that again!' I moved on and vowed to myself to never to do that, ever!

Maybe it was my delivery? I did have to force myself, so maybe they felt that? It also felt so foreign and not me at all. So, I ticked that box off and moved on. Back to how I compose myself- calm, reserved and polite.

Managing my modern business in this world has been challenging and lonely. But I know that I am not really alone, because I see others navigating this balance all the time. And I find it so odd when you hear advice that you must hustle, hustle, hustle and do everything you can to brand yourself and your business!

I would rather stick to what I know and what I am comfortable with. And that’s ok. It has to be. 4 years deep into this business and I'm still here! It may not be what the business mentors and the trends are saying, but why do we need to bend to Western culture when it’s fine to also acknowledge and respect your beliefs, and not conform just to gain recognition and power?

Sweet Revelations Diary Entry #2: Am I Too Old... or Too Young? The Late-Bloomer Bakery Crisis.

I have been feeling a bit out of sorts lately. Is it a sign that I’m getting old?

Opening a business as a “late bloomer” (which is what I like to call myself - or just old) has had me doubting myself almost daily. Am I smart enough? Young enough? Strong enough to be in the same world as those young, up-and-coming entrepreneurs who seem to have it all figured out?

Sure, I have lived and learned a lot, which gives me some experience. But is it the type of experience I could actually teach someone else? Who would want to listen to an old lady bragging about her cakes and brownies?

The internet doesn’t help, either. I follow this lovely woman on TikTok who runs her own bakery. She wears glasses and doesn’t really mind much about how she looks, so I assumed she was in my age bracket. Turns out, she’s quite a lot younger than I am!

Which points me to my next hot topic: Do you ever get mistaken for someone else?

In my case, I am constantly mistaken for my children’s older sister or aunty. People will ask them, “Where is your Mum or your parents?” I have to look them in the eye and say, “I’m their mum.” Other times, people ask if I’m my boys’ older sister. I would love to say, “Yeah! And they are so annoying!” But instead, I just take it as a compliment.

Still, that thought always creeps into my mind when I’m working the markets. Do people not take me seriously because they think I’m too young, or assume I’m just running my mum’s business?

Case in point: At my first Wingatui market in Mosgiel, I invited a good friend to hang out with me behind the stall. While we were sitting there waiting for the crowds to come for a visit, customers went straight to my friend on two separate occasions. They asked her how much items were and said hello to her, completely ignoring me.

We both laughed about it afterward because she’s such a good sport and knew exactly what was happening. But it left me wondering: Is that how I am perceived? Do I need to dress a certain way to be taken seriously?

I am a busy mum. I wear what is comfortable and clean. Ish. I don’t own designer brands, and I don’t go out of my way to dress to impress. I might have a young-looking face and a young-sounding voice, but my mind is pure old soul.

And honestly? This young-looking face is ready to call it a night by 7pm!

Fakaalofa lahi atu kia mutolu oti! Hey everyone! I’ve been doing some writing behind the scenes about my business journey, and I wanted to start sharing it with you all here. This is the real, messy truth of building a business from the kitchen table up.

𝗦𝘄𝗲𝗲𝘁 𝗥𝗲𝘃𝗲𝗹𝗮𝘁𝗶𝗼𝗻𝘀 𝗗𝗶𝗮𝗿𝘆: 𝗘𝗻𝘁𝗿𝘆 #𝟭 𝗢𝘂𝘁𝗴𝗿𝗼𝘄𝗶𝗻𝗴 𝘁𝗵𝗲 𝗣𝗶𝗻𝗸:
𝗪𝗵𝘆 "𝗝𝘂𝘀𝘁 𝗦𝘁𝗮𝗿𝘁𝗶𝗻𝗴" 𝗶𝘀 𝗮 𝗗𝗮𝗻𝗴𝗲𝗿𝗼𝘂𝘀 𝗟𝗶𝗲.

I used to think success looked like a specific shade of pink.

Early on, I followed a bakery I admired. I loved their aesthetic, so I “stole” their pink, mirrored their pricing, and tried to copy their vibe. I thought that as a management graduate, I’d be “sweet.” But four years in the trenches of the Dunedin cake world taught me something my degree never did: you can’t build a business on someone else’s blueprint. It took a lot of trial and error, but I finally realised that my business only started to thrive when I stopped looking at what everyone else was doing and started focusing on what I do best.

I’ve realised that there are a thousand other ways to be successful without copying. I’ve outgrown that pink. I’m moving toward a more modern, operational identity- one that reflects me as a business woman, not just a baker. This blog is a little sneak peek into that pivot.

𝗧𝗵𝗲 "𝗝𝘂𝘀𝘁 𝗦𝘁𝗮𝗿𝘁" 𝗠𝘆𝘁𝗵
You’ve heard the advice. It’s on every inspirational tea towel: “Just Start".

And I’m here to tell you that’s a lie. Telling someone to “just start” without telling them to get licensed, registered, and researched is irresponsible. So many people jump and fail… not because they aren’t talented, but because they didn’t have the checklist. They saw a random TikTok or a viral post and thought, “Yeah, I’ll do that".

But business isn’t a 15-second clip. It’s licensing. It’s food safety. It’s being mentally sound enough to deal with the public.

My philosophy? You have to try, and then you have to try again. But this time, we do it with a plan.

P.S. If you want to read these first or follow more of my behind-the-scenes catering diary, you can subscribe to my Substack here:
