Tomorrow, our friends from Inka bross are taking over the Xolo kitchen.

For one night only, Jimmy and Edson will be bringing the bold flavours of Peru to our kitchen. We couldn't be happier to have them with us.

Mexico, thank you for reminding us why we do what we do.
Every market, every kitchen, every fire, every conversation and every shared meal left a mark on us.

We come back inspired, with new ideas, deeper respect for the traditions that continue to shape Xolo, and 9 new dishes created in honour of this journey.

Letter to San Cristóbal de las Casas,

Thank you for welcoming us into your streets, your markets, and your culture.

Walking through the tianguis and seeing people still gathering to trade goods reminded me that some traditions remain alive despite the passing of time. It was inspiring to see artisans proudly sharing their work, preserving techniques and stories that have been passed down through generations.

The textiles, the hand embroidery, the colors, and the attention to detail are some of the finest expressions of craftsmanship we have seen on this journey. We came looking for pieces that could bring character and authenticity to Xolo, and we found so much more than that.

One of the things I will remember most is hearing people speaking their own dialects in everyday life. It was a beautiful reminder that culture is not something kept in museums—it is alive in the voices, hands, and traditions of the local people.

Thank you, San Cristóbal, for sharing your art, your history, and your way of life with us. We leave inspired, carrying a small piece of your craftsmanship and spirit back to Xolo.
