An itty bitty story about a Smoked Brisket Pie.
Back in 2015 we spent a winter in Montreal. It was cold. The coldest winter Quebec had had on record for some 100 years. Across the span of three months we saw two ice storms, multiple 20Β° below days, three hockey games, and the rear end of countless Montreal Smoked Brisket sandwiches.
Life changing sandwiches.

If you've been to Montreal you know we're talking about
Ben took one bite and said "Well. I've gotta figure out how to do this." And thus began a several year deep dive into the wonderful world of smoked meats.
When we decided that Itty Bitty Bakery would indeed become a pie cart, the first, and for a while only, pie we made was Smoked Brisket.
Our version now leans towards a Texas style brisket but its inspiration will always be Montreal, Schwartz's, and a life changing sandwich.
