Winter is officially here and with winter comes the cosy, slow, delicious meals!

One of our absolute favourites this time of year? Beetroot.
Most people think of beetroot in salads or burgers, but it really shines in winter cooking. Roast it up with a bit of garlic and rosemary and it turns sweet, soft, and seriously hard to beat.
Another easy go-to is a warm beetroot salad, think roasted beetroot, pumpkin, feta, walnuts or pine nuts and fresh greens. Simple, hearty, and perfect for colder days.
And of course, beetroot works so well in soups, adding colour, depth, and a bit of natural sweetness.
