Day-1 PANEER RECIPE
Step-by-Step Method
1. Prepare the Paneer for Frying
• In a bowl, mix cornflour, maida, pepper, salt, and ginger-garlic paste.
• Add water little by little to make a thick batter (it should coat the paneer well).
• Add paneer cubes and gently toss so each piece is coated.
• Heat oil in a wok. Deep fry the coated paneer cubes on medium-high flame till golden and crispy (2–3 minutes). Don’t overcook, paneer can become chewy.
• Drain on kitchen paper and keep aside.
2. Make the Chilli Sauce
• In a wide pan or wok, heat 2–3 tbsp oil on high flame (Indo-Chinese dishes are cooked on high heat).
• Add chopped garlic and green chillies. Sauté for 30 seconds till raw smell goes.
• Add onion, tomato and capsicum squares. Stir-fry on high flame for 1–2 minutes (they should remain crunchy).
• Lower the flame. Add soy sauce, red chilli sauce, tomato ketchup, vinegar, black pepper,msg and a pinch of salt. Mix well.
3. Combine Everything
• Toss in the fried paneer cubes. Mix gently so the sauce coats every piece nicely.
• Stir-fry for 1–2 minutes on high flame.
• Taste and adjust – more sauce or chilli if needed.
• Finally add chopped spring onion greens. Give a quick toss.
4. Serve
• Serve hot immediately as a starter or with fried rice/noodles.
